Low fat religion spawned legions of processed foods, products with ramped up levels of sugar, and equally dubious sweet substitutes, to compensate for the inevitable loss of taste when fat is removed. The anti-saturated fat dogma gave manufacturers the perfect excuse to wean us off real foods that had sustained us for centuries, now portrayed as natural born killers, on to more lucrative, nutrient-light processed products, stiff with additives and cheap fillers.

Government diet gurus and health charities have long been engaged on a salt reduction crusade, but what has been missing from this noble effort is the awareness that excessive salt is a problem of processed food. High salt is essential to that larger-than-life processed food taste. Without salt, and a sub-set of assorted chemical flavour enhancers, processed foods would be exposed for what they are: products that have lost their natural savour and nutritional integrity. Salt-free cornflakes, for instance, would be well nigh inedible. No one would want to buy them because they would see that they are a heap of nutritional uselessness.

Vegan? Watch Your Protein Levels.

If you are a vegan or vegetarian with a secret stash of candy, jelly beans or dark chocolate, join the club. A constant craving for carbs with occasional headaches, muscle or joint pain may be due to a slight deficiency of protein.

The symptoms of a severe protein deficiency include:

  • Edema (swelling)
  • Thinning brittle hair and/or hair loss
  • Ridges in finger and toe nails
  • Skin rashes; dry skin
  • Weakness
  • Constant Fatigue
  • Muscle soreness and cramps
  • Slow healing
  • Skin ulcers
  • Sleep issues

Know Your Food Containers

Understanding different types of plastics is crucial when making decisions on items for your family and home. Recycling numbers, ranging 1 through 7, are used to specify what type of plastic is contained in an item and in turn how that item may be recycled. They are found inside an M.C. Escher style triangle of arrows turned in on themselves on the bottom of most plastic containers. Of the seven different types of plastic available on the American market, all are based on a different resin. Each of these seven varies in both its effect on environmental safety and ease of recycling. What follows is a general outline of most types of plastics along with their most common uses.

PLASTIC #1: POLYETHYLENE TEREPHTHALATE (PET OR PETE)
Common uses: 2 liter soda bottles, single use water bottle containers, cooking oil bottles, peanut butter jars.
This is the most widely recycled plastic. Commonly recycled, PET is semi-rigid and very lightweight. It’s best suited for single-use containers as it can break down when exposed to light and heat, causing it to leach. PET can also be recycled into fabric, similar in strength and appearance to virgin nylon.

PLASTIC #2: HIGH DENSITY POLYETHYLENE (HDPE)
Common uses: detergent bottles, milk jugs.
HDPE is a sturdy and reliable non-leaching translucent plastic. HDPE resists UV penetration, which can damage and discolor the plastic. Dishwasher-safe and able to withstand temperatures from -148 to 176° F (-100 to 80° C), it’s ideal for food and beverage storage.

PLASTIC #3: POLYVINYL CHLORIDE (PVC)
Common uses: plastic pipes, outdoor furniture, shrink wrap, water bottles, salad dressing and liquid detergent containers.
Most PVC vinyl products contain phthalates, which mimic human hormones and also affect various life forms including fish and invertebrates adversely. For this reason, we do not recommend products made from PVC for food storage.

PLASTIC #4: LOW DENSITY POLYETHYLENE (LDPE)
Common uses: dry cleaning bags, produce bags, trash can liners, food storage containers.
LDPE are safe, non-leaching plastics. Flexible, impact-resistant and microwave-proof, it’s dishwasher-safe and able to withstand temperatures from -148 to 176° F (-100 to 80° C). Safe for use with food and beverages.

PLASTIC #5: POLYPROPYLENE (PP)
Common uses: bottle caps, food containers, drinking straws.
BPA-free, polypropylene is commonly used for injection molding. It’s resistance to high heat generally makes it microwave and dishwasher safe, as well as a good option for food and beverage storage.

PLASTIC #6: POLYSTYRENE (PS)
Common uses: packaging pellets or “Styrofoam peanuts,” cups, plastic tableware, meat trays, to-go “clam shell” containers.
Polystyrene foam is a major component of plastic debris in the ocean, where it becomes toxic to marine life. Currently, the majority of polystyrene products are not recycled. This material should be avoided.

PLASTIC #7: OTHER
Common uses: LEXAN, certain kinds of food containers and Tupperware.
This plastic category includes any plastic other than the above named types. These containers can be any of the several different types of plastic polymers.
Polycarbonate is the most commonly-known #7 plastic. Proven to leach BPA, it is not recommended for food storage. Not all “other” plastic is polycarbonate, however. Plastics labeled #7 can also be a combination of several safe plastics. You should engage in due-diligence when making decisions about #7 plastics.

Google Brings Nutrition Information to Search

The latest expansion of Google’s Knowledge Graph will make nutrition information more accessible. The new nutrition service is rolling out to those in the U.S. over the next 10 days, Google said. It will be available on desktop and mobile search, but only in English at this point. Google promised to add additional foods, and make this feature available in other languages in the future.
The Web giant announced plans to add nutritional information for more than 1,000 fruits, vegetables, meats, and meals directly into search. This means that when you Google something like “how much protein is in a banana?” or “how many calories are in an avocado?” you’ll get the answers right away, without having to click through to any of the actual search results.

This healthy choice features the taste of egg nog without the casein or other animal protein. Show you care by helping your guests have a merry, cholesterol free, Christmas!
Ingredients
  • 4c. Almond or Soy Milk (regular or vanilla)
  • 2 Tbs. vegetable gelatin (from FiberAgar Flakes or 1 tsp. FiberAgar powder)
  • 1/3 tsp. Ground nutmeg
  • Rum (if desired)
  • 1 pinch Sea Salt
Instructions
  1. Heat 2 c. soy or almond milk, salt and agar in a saucepan.
  2. Stir until the agar is completely dissolved. Do not boil.
  3. Turn off the heat and stir in salt, vanilla and nutmeg.
  4. Refrigerate until set, approximately 1 hour.
  5. Blend this thickened mixture with the rest of the soymilk until you reach your desired consistency. Add rum here if desired.
  6. Chill and serve topped with ground nutmeg.

Good, healthy, and cheap rings the trifecta bell with vegetable scraps and trimmings that might otherwise feed the compost too early. Use it as a base for other dishes. You can freeze it in measured amounts using ice trays and other reusable containers.
Ingredients
  • A liberal mix of onions, garlic, carrots, celery, parsley, leeks, chard, mushrooms, scallions, potato peelings, lettuce, eggplant, zucchini, green beans, and bell peppers.
  • A careful mix of asparagus, parsnips, squash, fennel, corn cobs, pea pods, and cilantro.
  • Your favorite mix of salt, pepper, thyme, basil, and perhaps a bay leaf.
Instructions
  1. Fill a large pot halfway with water, about 3-4 quarts, and bring to a boil. Drop in all the vegetable scraps and bring back to boiling. Simmer for 20-30 minutes, stirring occasionally.
  2. Allow to cool for a few minutes. Use a fine-meshed strainer or colander lined with cheesecloth, and carefully pour the broth through the strainer into another container.
  3. Let the broth cool to room temperature, about an hour or two. Give it a taste and add any additional salt or seasonings as desired.
  4. Measure out the stock in useful increments such as ice cube or cup sizes. Freeze in individual containers.
  5. Compost the strained out vegetable scraps.

The flavor maestro is at it again. This melodious blend of sweet potato and pear will take you up, up, and away!
Ingredients
  • 1 tablespoon olive oil, sesame oil, or vegan margarine
  • 1 small onion, chopped
  • 1/4 cup chopped carrot
  • 1/4 cup chopped celery
  • 3 medium-sized sweet potatoes, peeled and diced
  • 2 pears, peeled and diced
  • 1/2 teaspoon dried thyme
  • 1 teaspoon paprika
  • 5 cups vegetable broth
  • 1/3 cup coconut milk
  • 2 teaspoons maple syrup, or to taste
  • 2 teaspoons lime juice, or to taste
  • salt and pepper (freshly ground) to taste
Instructions
  1. In a pot, heat margarine on medium heat. Add onion, carrot and celery and sauté for 1 minute. Add sweet potatoes, pears and thyme and sauté for about 2 minutes. Add paprika and veggie broth. Bring to a boil and simmer for 15 minutes or until sweet potato is soft.
  2. Wait for soup to cool down a bit before you puree it, otherwise it will explode in the blender because of the heat.
  3. Puree in a blender or food processor until smooth. Return to pot. Add coconut milk, maple syrup and lime juice. Simmer for 5 minutes. If soup is too thick add a little extra broth.
  4. Season with salt and pepper, adding more syrup or lime juice as needed. Drizzle with maple syrup if preferred. Can be made up to 2 days ahead of time.

Ingredients
  • Honeycrisps with Jonagolds are plenty sweet. They’re great for babies as they don’t need any sugar. Other favorites for making sauce are the McIntosh. Try experimenting a little to find a blend that excites you. Red Delicious can be combined with a softer variety like the Macoun in different ratios to get a texture that’s completely yours.
  • 1/2 bushel apples, washed, cored and quartered
  • 0 to 3/4 cup sugar
  • 1/2 to 1 T. cinnamon
  • 1/4 tsp. nutmeg
Instructions
  1. Place apples in a pot and add enough water to barely cover the bottom of the pan. The apples will release own their juices as they cook, they cook.
  2. Simmer over medium heat, stirring occasionally, until apples are very soft and mushy.
  3. Process in manageable batches with a food mill over a large bowl.
  4. Discard skins retained by the screen.
  5. Gradually add sugar if needed.
  6. Add cinnamon and nutmeg; stir well.
  7. If necessary, return to heat and simmer to reduce liquid.
  8. Fill containers to within one inch of the top and cover.
  9. Let containers sit until sauce cools to room temperature, then freeze.
